With only 4 to 6 simple ingredients all cooked in your pie iron, these pie iron stuffed tacos couldn't get any easier - and cleanup is super simple!

Kids love this recipe because the tortillas and meat are easy to assemble!

Tasty Tacos

These are better than tacos because the delicious taco meat and cheese is stuffed in between two flour tortillas then toasted.

The meat and cheese mix comes out perfect, and there is just something about the taste of the tortillas over the fire that adds AMAZING flavor. I'm getting hungry just thinking about it!

How To Serve

Need easy serving suggestions? Pudgie Pie Tacos can certainly be a meal in one but if you're looking for a little more, here are some simple ideas of what to serve with them:

  • Feeding a crowd? For every pie taco, you need approximately2 tortillas, 1/4 to 1/3 cup taco meat, 1/4 cup greater cheese, and 1 to 2 tablespoons of miscellaneous other toppings such as sliced olives and green onions. This recipe serves 6.
  • Salsa and sour cream for dipping.
  • Grilled corn is amazing with this dish!
  • A fresh side salad is also easy to make and goes well with these pie tacos.

Here's what you'll need to make these delicious Pudgie Pie Tasty Tacos:

Ingredients

  • Ground Beef - you can also substitute ground chicken or turkey
  • Taco Seasoning - any taco seasoning packet will do, or you can make this healthy homemade taco seasoning from our sister site Seeking Good Eats! I bet you have all the ingredients on hand already. 🙂
  • Flour Tortillas - use the 6" fajita sized tortillas
  • Cheese - we used cheddar, but you could use a Monterey jack or even a pepper jack cheese
  • Olives - use sliced olives. If you don't like olives, just leave them out.
  • Green Onion - I love the freshness that green onions add, but feel free to leave them out.
  • Optional: butter for spreading on the outside the tortillas, plus any other favorite taco toppings, sour cream, salsa, etc.

Tools

  • Pie Iron 4 pack or Pie Iron Single - feel free to use any brand! We've owned the Rome brand for years and they've held up nicely.
  • Nonstick spray
  • Cutting board - for assembling the tacos and cutting after cooking - MAKE SURE IT IS HEAT PROOF so your hot pie iron won't melt it.
  • Knife - for cutting the pudgie pie taco if desired
  • Paper Towels - things can sometimes get messy!
  • Potholders, grill mitts, or long tongs - in case you need to save someone's pie iron from the depths of the ashes! It happens.

Variations

There are several ways you can vary or make substitutions to this recipe:

  • Butter the tortillas beforehand if desired. You can even sprinkle with some garlic powder or salt, or another favorite seasoning on the outside!
  • Substitute ground chicken or turkey for taco meat.
  • Add a few sliced jalapenos for some extra heat
  • Substitute any favorite grated cheese. If you don't feel like grating the cheese you can use a cheese slice.
  • Get creative and a tablespoon or two of other favorite taco fillings - black beans, refried beans, drained diced tomatoes, canned corn, finely diced onion, etc.

Step by Step Instructions

Here's how to make Pudgie Pie Tasty Tacos:

Make Taco Meat

In a medium skillet, brown ground beef. Add taco seasoning and water, and cook according to seasoning instructions. Time-Saving Tip: make the taco meat at home before you leave on your camping trip!

Assemble Tacos

Generously spray the pudgie pie maker with nonstick spray.

Lay one tortilla on the pie iron then fill with about 1/2 cup taco meat, 1/4 cup cheese, and about 1 to 2 tablespoons of your favorite taco fillings such as sliced olives and green onion.

Note: it is not necessary, but you can butter that outside of your tortillas before laying in the pie iron.

Lay the second tortilla over the top. SEcure the pie iron and trim any excess tortilla from around the side.

Cook

You can cook your Pudgie Pie Taco over a campfire, but did you know that you can also cook them on your camp stove or even grill? This is a great option if it rains or you aren't able to get a fire going! Here's what to do:

  • Campfire - cook your pie taco for 4 to 7 minutes, turning halfway, until the tortilla is golden brown and the filling is hot. For best results keep the pie iron in a hot area of coals but not TOO HOT. It is easy for the tortillas to burn so keep an eye on them.
  • Camp Stove - Turn your camp stove on medium heat and lay your pie iron directly on the stove grate over the flame. Cook for approximately 3 to 4 minutes per side
  • Grill - Preheat your grill to medium heat (300 to 400 degrees). Lay your taco pies directly on the grill and cook for approximately 3 to 4 minutes per side until the tortilla is golden brown and the filling is hot.

Serve and Enjoy

Carefully open the pie irons and remove your taco. Let them sit for a few minutes before eating -they're really hot when they first come out.

Serve with sour cream and salsa for dipping if you want. Enjoy!
