What Is Phirni?

Phirni is a popular north Indian rice pudding. This Indian dessert is especially made during festivals like Diwali, Ramadan and also Indian weddings.

While traditional phirni is just a sweet pudding with rice and cardamom yet there are many variations with the recipe. Some of the popular phirni recipes are rose phirni, kesar phirni, mango phirni etc.

Tasty mango phirni recipe is popular among most of all the phirni recipes. We like this dessert very much at our home and I make it during festivals also. We especially do not miss mango phirni during mango season. Fresh mango puree compliments the flavor and texture regular traditional phrini wonderfully.

How To Make Mango Phirini?

This mango phirni is easy to make.You just make the traditional phirni and let it cool down. Finally you have to mix the pureed mango and chill the phirni.

If possible set and serve phirni in small earthenware pots known as matka. The flavor of this dessert is wonderful when served in clay pots. If small clay pots are not available, you can use dessert bowls or ramekins to set and serve this dessert.

Can We Use Canned Mango Pulp For Mango Phirni?

Yes by all means you can use store bought tinned mango puree for aam ki phirni. Use very good quality tinned alphonso or kesar mango pulp for this recipe.

If the mango puree is sweetened, adjust the sugar accordingly while making phirni.

The quantity of mango puree is at your discretion. For a mild mango flavor in your firni you can just use 1/2 cup puree. If you however like pronounced mango flavor then you can add 1 to 1.5 cups just like I did here.

How To Make Mango Phirni With Condensed Milk?

Yes, to make amngo phirni with condensed milk Leave out sugar, use 1 /2 cup condensed milk and 1.5 cups full fat milk in the given recipe.

You can adjust te quantity of condensed milk by adding more or less according to your preference.

Tips To Make Best Mango Phirni

Use best quality ripe mangoes that are less fibrous for perfect phirni. Also make sure the mangoes are sweet else we might up adding more sugar to the phirni.

Always make sure to the add the mango puree only after the phirni comes to room temperature.

Using basmati rice lends a wonderful aroma to the phirni

You can make this with any kind of ripe mango. Just there will be some variation in color of the phirni.

Finally you can use strawberry puree or also rose syrup instead of mango puree.

You can serve mango phirni as dessert after chilling for 3-4 hours. I however freeze the phirni for 1 hour or so when I want to serve it quickly.

Phirni is traditionally served in earthenware bowls so do use them if available.

How to make mango phirni recipe (step by step).

1. First of all rinse 2 tablespoons basmati rice well in water. Spread on a plate and fan dry for 10 minutes.

2. Take the rinsed rice in a mixer jar and pulse few times. It should be fine grits yet not a smooth powder. Also coarsely powder 2 tablespoons pistachios, pods of 4 cardamoms and 2 tablespoons almonds. Set aside.

3. Next bring 500 ml (2 cups) milk to a boil. Add the rice grits and mix very well in low flame.

4. Simmer the milk in low flame for 12-15 minutes.

5. While the milk is simmering puree 1 large or 2 small mangoes. You can add some sugar if needed. Chill till use.

6. Now after simmering for 15 minutes the rice will get cooked and milk will reduce in volume.

7. Next add sugar and mix very well. Make sure there are no lumps.

8. Add the cardamom nuts powder and stir well.

9. Simmer for 3-4 minutes. Cool to room temperature.

10. Once the phirni reaches room temperature add the prepared mango puree and mix very well. Transfer to small matka or earthenware bowls if available. Otherwise you can also use ramekins to serve.

  • 2 tablespoons basmati rice or any long grained
  • 500 ml full fat milk (2 cups)
  • 1/2 cup sugar
  • 2 mangoes ripe and sweet
