A timeless no nonsense cheesecake recipe that is made withBAKERS Blue Label®Marie biscuits as its base.

What you will need:

  • 1½ x 200 g packets of BAKERS Blue Label® Marie biscuits
  • 180 ml melted butter
  • 90 ml lemon zest
  • 2 x 250g creamed cottage cheese
  • 2 x 385g cans condensed milk
  • 125 ml lemon juice
  • 200ml sugar

Steps:

  1. Pre-heat the oven to 150C.
  2. Place the BAKERS Blue Label® Marie biscuits in a processor and process to fine crumbs.
  3. Add the melted butter and half of the lemon zest and pulse until combined. Push the mixture into the bottom and sides of a greased 32 cm loose-bottomed flan ring.
  4. Whisk together the creamed cottage cheese, condensed milk and lemon juice and pour into the crust.
  5. Bake in the oven for 20 minutes. Remove from the oven and set aside to cool in the flan ring.
  6. Meanwhile, heat the sugar over medium heat until melted and golden brown. Add the remaining lemon zest and immediately remove from heat.
  7. Using a small whisk or a fork, swirl or drizzle thin strands of the sugar mixture over the top of the cheesecake.
  8. Allow the sugar topping to cool completely and harden before removing the cake from the flan ring.

What you need

  • 200g Tennis® Lemon Flavour Biscuits
  • 100 g butter, melted
  • 3 egg yolks
  • 2 tins Condensed Milk
  • 150mlfreshly squeezed lemon juice
  • Pinch of salt
  • 1 cup / 250 ml whipping cream, to serve
  • Toasted coconut flakes to serve (optional)

Steps:

  1. Preheat the oven to 180 degrees Celsius.
  2. Break the Bakers Tennis® Lemon flavour biscuits into crumbs by hand or by using a food processor and mix in the melted butter until well combined.
  3. Spray a 26cm – 28cm pie dish with cooking spray and line it with the crumb mix and press evenly to create a base and sides. Bake for 8 minutes. Remove and set aside.
  4. Beat the egg yolks, condensed milk, lemon juice and salt until light and fluffy, about 4 – 5 minutes.
  5. Pour the mix into the pie base and bake for 15 minutes.
  6. Allow the pie to cool before setting it in the fridge to cool completely (at least 2 hours).
  7. Serve the pie with whipped cream and toasted coconut flakes.

What you need:

  • 250g butter
  • 5ml vanilla essence
  • 500g icing sugar

Steps:

    Steps:

    1. Place the BAKERS Romany Creams®biscuits in a processor and process into fine crumbs. Add the melted milk chocolate, butter and golden syrup and pulse briefly to combine.

    What You Need:

    • 2 x 360 g cans caramel treat
    • 65 ml lemon juice
    • 250 ml fresh cream, stiffly beaten
    • 18 BAKERS Tennis®biscuits
    • 2 x 50 g peppermint crisp chocolate bars, chopped

    Steps:

    1. Whisk together the caramel and lemon juice. Fold in the fresh cream and set aside. Spray a 20 cm square dish with non-stick spray and place a layer of BAKERS Tennis®biscuits.

    What You Need:

    Base

    • 1 x 200g packet of BAKERS Salticrax®crackers, crushed
    • 90ml melted butter

    Filling

    • 30g butter or margarine
    • 2 large leeks, thinly sliced
    • 250g cream cheese
    • 250ml sour cream
    • 5 XL eggs
    • 2 x smoked chicken breasts, roughly chopped (approx. 300 g)
    • 250ml grated cheddar cheese
    • 5ml oregano
    • 50ml chopped parsley
    • salt and pepper
    • garnish – extra chopped parsley

    Steps:

    1. Pre-heat oven at 160⁰C.
    2. Combine cracker crumbs and butter and press into a greased 23mm spring form pan and chill.
    3. Melt butter and sauté leeks until soft and cool.
    4. Beat cream cheese, sour cream and eggs together.
    5. Add leeks and all remaining ingredients.
    6. Pour mixture into prepared biscuit base and bake for 50-60 minutes or until set.

    A Brief History of Bakers Biscuits

    1975 The First Biscuits

    The original biscuits were known as "Ship Biscuits" or commonly know as "hard tack". They were 5 inches in diameter and about a half an inch thick. These biscuits were used as rations for the British Navel men, who would go to sea for long periods of time.

    1851 Baumanns Biscuits

    Johann Friedriech Baumann establishes Baumann & Co in Durban and within 3 months of being in Durban village he opened up his first bread baker and grocery store. Interesting fact was that he published his first advertisem*nt on the first issue of the Natal Mercury on Thursday, November 25, 1852.

    1895 First Bakers Machine Installed In South Africa

    The first machine to make fancy biscuits was installed. This machine would cut out the biscuits and automatically place them on the pans to be placed in the ovens by hand.

    Bakers Limited imports the first fancy biscuit machine to South Africa. The first versions of the iconic Blue Label® Marie biscuit begin to appear; 1911 sees the introduction of the Tennis® biscuit.

    1915 Baumans to Bakers Limited

    The sinking of the Lusitania by the Germans in World War I in 1915 resulted in rioting in Durban. All businesses that had German names were burnt to the ground including Baumanns Biscuits. The following excerptis out of the Memoirs of Albert Baumann"

    “During the May 1915 riots, when L Baumann & Company was burned down, a Mr S Welsford telephoned Mr Albert Baumann, offering to come on the Board of the new company. He suggested that it be called ‘Bakers Ltd’ because when a woman wants to buy a loaf of bread she automatically thinks of a baker and this is the first word that arises in her mind. The name could therefore be easily remembered and so easily called to mind."

    1923 The 'Little Man' Trademark

    How the Bakers "Little Man" trademark came about?

    "Mr Albert Baumann told me the origin of this trademark. He said he had noted that Lever Brothers sold a soap, which was called “Monkey Brand”. The brand mark of a monkey’s face appeared on the packet and could easily be remembered and identified the product.

    He felt that he wanted to evolve a brand picture as well. He approached a printer suggesting that they should use a little, fat grocer man holding a tin of biscuits. His basic idea was to have an easily recognizable identity similar to the way Lever Brothers had established an identity."

    The grocer man in the old days, would wear an apron, with rolled up sleeves and with a pencil held behind his ear, ready to serve his customers who approached the counter. This symbol would become a symbol of quality and service.

    1935Provita makes a star appearance

    JML Baumann , been the largest producer of bread in Durban (owning about 56% of the trade), decided to try something new. He wanted to make an above average brown bread loaf and charging an extra penny per loaf. His son William Baumann, came up with the name of this new loaf and called it Provita, "Pro" - For and "Vita" - Life. It proved to be very successful and outsold the normal brown bread.
